Mi Cocina Nachos
If you’re looking for a quick crowd-pleasing dish, this is it. Nachos are versatile, can be assembled easily with any ingredients you’d like. Here’s how my family likes to make them!
Serves 4.
INGREDIENTS
- 2 bags of Mi Cocina tortilla chips
- 3 cups shredded mozarella cheese
- 1 cup sliced black olives
- ¼ cup green onions (green part)
- 2 cups diced tomatoes
- 1 Mi Cocina Chipotle Medium salsa
INSTRUCTIONS
- Preheat oven to 375°F
- Spread Mi Cocina Tortilla Chips evenly on a 9” x 12” baking sheet.
- Sprinkle 1 ½ cups of mozzarella cheese over the chips.
- Layer on the second bag of tortilla chips.
- Spread the remaining mozzarella cheese.
- Bake until the cheese is melted and bubbling, approximately 20 minutes.
- Remove from the oven and top with green onions, tomatoes, and black olives.
- Serve with Mi Cocina’s Salsa Medium Chipotle or any Mi Cocina salsa of your choice.
NOTES
If you’d like to switch up the toppings, here are a few suggestions:
- Sliced avocado or guacamole
- Black beans
- Prepared ground beef, roasted chicken or pulled pork
- Roasted vegetables
- Corn niblets
- Pico de gallo
